Ingredients

Serves : 2
  • Zhunka : 1 cup gram flour (besan).


  • 1 tsp red chilli powder.


  • 1/2 tsp turmeric powder .


  • 1 tsp corainder powder.


  • 1 tbsp chopped garlic.


  • 1 tsp chopped ginger.


  • 1 tsp cumin seeds.


  • 1 tsp mustard seeds.


  • 1 tsp chopped green chillies.


  • 1 tbsp freshly chopped coriander leaves.


  • 5 to 7 curry leaves.


  • 1 chopped onion.


  • 1 tbsp ghee.


  • 1 to 1.5 cup water.


  • Bhakar : 1 cup bajra flour.


  • 1/2 tsp salt.


  • 1 tsp ghee.


  • 1 cup lukewarm water.


  • 1 tsp garlic Chutney.


  • 1 tbsp deep fried onions.


  • 1 tsp fried garlic chops.


  • 4 -5 tomato and onion julians each.

Directions

  • In a bowl mix gram flour and all the dry spices.
  • Once mixed well slowly add water to make a batter making sure no lumps are formed.
  • In a pan heat ghee add ginger , garlic , green chillies ,curry leaves ,cumin seeds and mustard seeds. Saute for a minute.
  • Add onions and saute till translucent.
  • Add the gram flour mixture and stir continuously. As the gram flour gets cooked the mixture will turn thick.
  • Water can be adjusted accordingly.
  • Finally add the freshly chopped coriander leaves.
  • For bhakar mix the bajra flour ,salt and lukewarm water.
  • Knead a dough.
  • Take a small portion in between your palms and and make the thick bhakar.
  • On the tawa cook it from the sides and then on the flame directly.
  • Apply ghee all over
  • In a serving plate place the bhakar. Now take a small portion of zhunka and spread over the bhakar. Top it with deep fried onions , garlic Chutney.
  • Finally garnish with freshly chopped coriander leaves, fried garlic chops ,tomato julians and onion julians.
