In a bowl mix gram flour and all the dry spices.
Once mixed well slowly add water to make a batter making sure no lumps are formed.
In a pan heat ghee add ginger , garlic , green chillies ,curry leaves ,cumin seeds and mustard seeds. Saute for a minute.
Add onions and saute till translucent.
Add the gram flour mixture and stir continuously. As the gram flour gets cooked the mixture will turn thick.
Water can be adjusted accordingly.
Finally add the freshly chopped coriander leaves.
For bhakar mix the bajra flour ,salt and lukewarm water.
Knead a dough.
Take a small portion in between your palms and and make the thick bhakar.
On the tawa cook it from the sides and then on the flame directly.
Apply ghee all over
In a serving plate place the bhakar. Now take a small portion of zhunka and spread over the bhakar. Top it with deep fried onions , garlic Chutney.
Finally garnish with freshly chopped coriander leaves, fried garlic chops ,tomato julians and onion julians.
